Cheesy eggplant bake

Instructions

Step 1
Preheat oven to 400°
Step 2
Slice eggplant in half and place on baking sheet.
Step 3
Make a slot down the half of each eggplant half and drizzle with olive oil and season to taste
Step 4
Bake for 45 minutes or until flesh is soft then remove from oven
Step 5
Full eggplant with layers of tomatoes and mozzarella and finish with parmesan
Step 6
Put in oven again and bake for an additional 5-7 minutes until cheese is golden
