Instructions
Step 1
Finely chop the garlic and onion

Slice the bacon into 1-2cm strips

Step 3
place 1tbsp of coconut oil into a warm medium-sized saucepan
Step 4
sweat off the onion for 2-3 minutes

Step 5
add in the bacon
Step 6
Put the garlic and peppers once the bacon is cooked
Step 7
add in the tin of tomatoes and season well with smoked paprika, salt and pepper
Step 8
once the sauce comes to a boil, gently crack 3 organic eggs over the top, cover with a lid and leave to cook for a further 3-5 minutes

Step 9
You can serve it alongside some organic spinach if desired
