Step 1
Place the roast in a 6-quart slow cooker.
Step 2
Sprinkle with the dill, garlic powder, onion powder, salt, pepper, and celery salt, if using.
Step 3
Slice the onion and add it and the butter to the slow cooker.
Step 4
Pour the broth and coconut aminos over the meat.
Step 5
Arrange the pepperoncini over the meat.
Step 6
Turn on the slow cooker and cook on low for at least 8 hours, until the meat is tender.
Step 7
Use two forks to gently shred the beef before serving.
