Instructions

Step 1
Cut the ends off the tomatoes then cut each tomato in half. Remove the insides of the tomatoes leaving "a ring".
Step 2
Finely dice the tomato insides and combine it with the remaining ingredients except cheese.
Step 3
Put the rings in a buttered and preheated frying pan. Spoon the egg and tomato mixture into each ring.
Step 4
Cover and cook on medium-low heat until the egg has mostly set and the bottom is browned.
Step 5
Flip over and top with cheese. Cover and cook until browned and the cheese has melted.
