Easy Split Pea Soup with Leftover Ham Bone- Chlebek

Step 1
Boil Ham bone for at least 1 hour in a large pot. Use approximately 10 cups of water.
Step 2
Remove bone and strain stock into a large bowl. Cut ham into small, bite sized pieces and return to stock in the bowl.
Step 3
Using original pot, dice 1 medium onion and saute with butter until onions are clear. (about 2-3 minutes)
Step 4
Return stock and ham to pot to combine with onions.
Step 5
Peel and cube potatoes to 1/2". Peel and cut carrots into bite sized pieces. Add split peas, potatoes, and carrots to simmering stock.
Step 6
Simmer covered for 30-45 minutes stirring occasionally. Split peas will break down and potatoes will become soft. If soup is too thick, additional water can be added
