Instructions

Step 1
Put the first four ingredients in a pan and cover with cold water. Cover, bring to the boil then remove from the heat. Leave to stand for 5 minutes then remove the fish. Drain the cooking liquid and reserve 300 ml
Step 2
Rinse out the pan, put over a medium heat and melt the butter. Add the flour and stir to make a paste. Cook for 1 minute. Remove from the heat and gradually stir in the wine/vermouth followed by the reserved cooking liquid. Return to a medium heat and stir constantly until thickened slightly.
Step 3
Simmer gently for 2 minutes then stir in the cream. Simmer for 5 minutes then stir in the mustard and season.
Step 4
Preheat grill to medium. Flake the fish in to bite sized pieces. Stir the spinach in to the sauce, followed by the fish and prawns. Transfer to an oven proof dish. Mix the breadcrumbs and cheese and sprinkle over the fish mixture. Grill for 1 to 2 minutes until golden. Serve with seasonal vegetables.
