Instructions
Step 1
In a large pot of water, begin boiling water for pasta noodles. Chop onions and carrots, and mince garlic.
Step 2
Saute diced onion and garlic on med-hi heat in pot or wide saute pan until onions until shimmery. Add in chopped carrots and ground beef. Break beef up into small chunks, cook until brown.

Step 3
CHERRY TOMATOES: add tomatoes and top with lid. Once the tomatoes are starting to burst, grab a spatula and mash the tomatoes to release the juices. Turn the heat to low, sprinkle in some more salt, and let reduce. PREMADE SAUCE: stir in sauce with the diced tomatoes, plus the water from the can. Let reduce.
Step 4
When the water is boiling add in the pasta.
Step 5
Drain the pasta and add it to the tomato sauce. Pour in ยผ cup of pasta water and toss.
Step 6
Let the sauce reduce and add in the parmesan cheese. Toss is the parsley and crack of pepper.
