Instructions
Step 1
Heat a saucepan over medium heat. Add olive oil, onion, carrots and celery and garlic. Season with salt and pepper. Cook until fragrant.
Step 2
Add chicken broth and chicken thighs. Cover and cook for 30 minutes or until chicken is cooked through.
Step 3
Remove chicken and add farro. Cover again and cook for an additional 10 minutes.
Step 4
While farro is cooking, diced chicken thighs into small cubes. Chop dill and lemon into wedges.
Step 5
Add chicken back to the saucepan along with kale. Stir until kale is wilted.
Step 6
Add to bowl and top with lemon and dill. Enjoy!
