Instructions

Step 1
Heat olive oil in a skillet over medium heat. Sauté garlic, shallot, tomato, and eggplant for 4-5 minutes until tender. Pour in quinoa and 2 cups of water. Season with salt and pepper and bring to a boil. Reduce heat to low and cook for 15 minutes. Stir in olive, feta, and garbanzo beans.
