1 lblean ground beef
I use 93/7, can substitute lean ground turkey if you prefer

0.5white onion
or yellow, diced

32 ozbeef broth

2potatoes
medium, peeled and diced

2carrots
medium, peeled and diced

1 cupfresh green beans
or frozen, sliced into thirds

14.5 ozcan diced tomatoes
fire-roasted is my favorite

2 Tbsptomato paste

1 Tbspgarlic minced

1 tspthyme
dried

1 tsporegano
dried

1 tspsalt

1 tsponion powder

½ tspblack pepper

parsley
Optional, fresh chopped, for topping
Instructions
Step 1
Add your ground beef and onion to a large pot. Use your spatula to crumble your beef.
Step 2
Saute beef and onion until beef browned and onion is wilted. This takes approximately 5 minutes.
Step 3
Add in all other ingredients. Cover. Simmer on medium high heat for 20 minutes.
Step 4
Remove from heat and ladle into bowls. Top with fresh chopped parsley.
