Coconut Quinoa, Veggies, Ground Turkey

Quinoa cooked in coconut milk with sauteed veggies - zucchini, red pepper, onion - and ground turkey.
It's a flexible recipe depending on what you have, so the only part I measure is the quinoa. I used 1 zucchini and 1 bell pepper and approximately 4 oz ground turkey lean.

Step 1
Bring coconut milk (2 c) to a boil and add quinoa (1 c). Simmer & cover
Step 2
Heat oil and onion in a pan

Chop zucchini and red bell pepper and add to pan + seasonings.

Add ground turkey to pan + seasonings.
Step 5
When finished, add quinoa to pan as well. Serve !
