Ingredients

¼ cupsun-dried tomatoes
chopped, drained of oil
2 Tbspolive oil
drained from sun-dried tomatoes
0.5 lbchicken
boneless and skinless, preferably, boneless skinless thighs, chopped
¼ tspsalt
¼ tspred pepper flakes
¼ teaspoonsalt
4roma tomatoes
chopped
¼ cupfresh basil leaves
chopped
8 ozspinach
fresh
3garlic cloves
chopped
8 ozspaghetti pasta
3 Tbspolive oil
use high quality olive oil or oil from the sun-dried tomatoes jar
Instructions
Step 1
Add sun-dried tomatoes & 2T of its oil to lg. skillet, on med.-low heat. Add chopped chicken; sprinkle red pepper flakes & salt over all. Cook (5 min.) until chicken is
cooked through.
Step 2
Add Roma tomatoes, basil leaves, spinach, & garlic to the skillet with chicken mixture; cook on med. (3- 5 min.) until spinach begins to wilt and tomatoes release some of their juices. Remove from heat. Taste & add more salt as needed; cover with lid, keeping off heat.
Step 3
Cook pasta according to package instructions, until al dente. Drain & add cooked, drained pasta to skillet with chicken & vegetables.
Step 4
Reheat on low heat, mixing everything well, add more salt &pepper, as needed. Remove from heat.
Step 5
Option to add more high-quality olive oil — really tasty! — or more olive oil from sun-dried tomatoes... and serve.
