Instructions

Step 1
Spray a large saucepan with low-calorie cooking spray and place over a medium heat.
Step 2
Add the onion and fry for 5 minutes while stirring.
Step 3
Add the leeks and garlic and cook for a further 10 minutes, stirring, until softened and golden.
Step 4
Add the stock, potatoes, nutmeg, salt and pepper.
Step 5
Bring to the boil, lower the heat, cover and simmer for 30 minutes until the potatoes are tender.
Step 6
Add the broccoli, cover and simmer for 10 minutes or until the broccoli is just tender and still bright green.
Step 7
Remove the pan from the heat and blend the soup until smooth.
Step 8
Stir in the cheese until melted and season to taste before serving
