Instructions

Step 1
1. Pour boiling water over bulgur, let sit for 15 minutes until all the water is absorbed

2. Gentily warm olive oil in a skillet and saute onion and carrots for about 5 minutes. Add zucchini and squash until softened. Remove from heat.

4. Make sauce in food processor, blend remaining ingredients

5. Assemble salad
