Freekeh with lamb Shank is an authentic Lebanese dish, the main ingredient is Freekeh and the lamb shank, plus the onions and various spices, served with yogurt salad with cucumber, or vegetable salad of all kinds.

Instructions

Step 1
Put the meat pieces with spices (coriander, cumin, black pepper, turmeric), and marinate for half an hour.
Step 2
Heat the oil in a bowl and fry the boiled meat pieces from all sides until golden, then add chicken broth, ginger powder, cardamom pods and cinnamon stick.
Step 3
Cover the skillet and boil for an hour and a half min or until the meat is tender.
Step 4
Turn off the heat, remove the Shanks from the bowl, drain the broth and set it aside and keep the meat warm.
Step 5
Melt the butter in a frying pan and fry the onions for about 4-5 minutes, or until they are soft.
Step 6
Pour the meat broth about 5 cups and a half or 1375 ml, then add the freekeh, then leave the mixture to boil.
Step 7
Reduce the heat and cover the pot, cook the mixture on a low heat, for about 25-30 minutes or until the liquid evaporates and the Freekeh is completely cooked.
Step 8
You may Keep the shanks with the bone or you may boneless if you like, serve the freekeh in a serving dish with meat on top and decorate the plate with almond, pine seed and green pea.
