Couscous Paella

This dish has classic paella flavours but takes only 10 minutes to make. That's some seriously fast cooking! Using couscous instead of rice eliminates most of the hassle involved in making a real paella and simplifies the whole dish to a couple of easy steps.

Step 1
Pan-fry the pepper in a splash of olive oil over a medium heat. After a couple of minutes add the prawns, peas and turmeric, crumble in the stock cube and add a small splash of water (about 1 egg-cup).
Step 2
Simmer for a couple of minutes until the peas are cooked and half the water has evaporated. Remove from the heat, season with salt and pepper and stir in the couscous.
