Instructions

Step 1
- Pre-heat oven to 180C and line a large, rimmed baking tray with baking paper

- Use a large bowl to blend the oats, nuts (and/or seeds), salt and cinnamon

- Pour in the oil, syrup or honey and vanilla. Mix very well until every bit of the mix is covered lightly. Pour the granola into your baking tray and use a large spoon to spread it

- Bake until lightly golden, about 25 minutes, stir halfway and press granola down with spatula to create a clumpy granola

Step 5
- Let the granola cool completely down! Undisturbed as this will crisp it up! Top with the dried fruit
Step 6
- Store the granola in an airtight container for 2-3 weeks or freeze for up to 3 months
