Instructions
Step 1
Preheat oven to 400 and cover a large baking sheet with foil.
Step 2
Mix all vegetables, oil, salt, pepper, garlic, and thyme in a bowl until evenly coated
Step 3
Spread vegetables on prepared baking sheet and roast in oven for 50 minutes.
Step 4
Carefully blend roasted vegetables in batches with the basil and red pepper flakes until they reach your preferred consistency. It will be HOT!
Step 5
Pour blended contents into a pot and simmer with chicken broth and cream until warmed through.
Step 6
Taste soup and adjust seasonings as necessary. Serve with grilled cheese sandwiches!
