Step 1
In a cold pot or pan, add garlic and about 2 tablespoons olive oil. Turn the heat to medium low. Once it starts to sizzle, cook for 3-5 minutes. Turn off heat and add 1/2 cup olive oil to cool down. Let sit and cool to room temperature.
Step 2
Once the garlic and oil come to room temperature, add all the ingredients to a food processor and buzz till it looks minced.
Step 3
Transfer chimichurri into a bowl and taste to check seasoning. Add salt if necessary. Top off chimichurri with desired amount of olive oil. Cover and let marinate for a few hours. Best if over night.
Step 4
Serve it with all the yummy food.
