Instructions

Step 1
Slice the two tomatoes and lay them out on a plate.
Step 2
Sprinkle with salt, sugar and juice and zest of 1 lemon.
Step 3
Leave ideally for 15 minutes.
Step 4
For the beans, mix 15g honey and 25ml of cider vinegar.
Step 5
Then mix together the beans, chopped spring onions, rocket, olive oil and pine nuts.
Step 6
Place this mix on top of tomatoes.
Step 7
Add around 60ml of honey to the pan and allow to caramelise.
Step 8
Add the halloumi to the tomato stack and finish with an extra drizzle of honey and juice and zest of another lemon.
