Cheesy mushroom chicken
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/4 teaspoon black pepper
2 tsp olive oil
1 1/2 pounds thin chicken breast
For the mushroom
1 onion sliced
1 pint sliced mushroom
3 large garlic cloves crushed
2 tablespoons butter
1/4 tsp salt
1/8 tsp pepper
Season chicken breast with salt pepper garlic powder Italian seasoning and olive oil. In a skillet over high heat add chicken breast and brown on both sides and then remove from the pan. To the same pan over high heat add butter and melt once the butter is melted add in onion and mushroom and sauté for three minutes then add remaining salt and pepper. Add in crushed garlic and sauté for an additional minute. Stir in chicken broth and simmer for one minute and then cut the heat. Add half of the mushrooms to the bottom of a 9 x 13 pan sprayed with nonstick spray top that with chicken breast and then spoon the remaining mushrooms on top of your chicken. Top each chicken breast with mozzarella cheese and bake at 400° for 15-20 minutes until cheese is melted and golden brown then enjoy.
