Instructions

Step 1
1. Peel potato and finely dice. Core and dice red and green bell peppers. Whisk eggs in small bowl.
Step 2
2. In large skillet, heat olive oil over medium heat, add potato, stir often till nearly soft and cook for 12 mins.
Step 3
3. Add bell peppers in pan and cook for 5 mins, until peppers are slightly softened.
Step 4
Add corn kernels and cook for 1 min.
Step 5
Pour in eggs, stirring constantly in circular motion and cook for about 5 mins, until eggs are set. Season with salt + pepper
Step 6
6. (Optional) Top with tomato salsa to serve.
