I've been trying to come up with high protein cheap microwave recipes (grocery prices have been skyrocketing and im lazy af) with Bing and this recipe is pretty good. Use a large microwave-safe bowl to allow the cake to expand more. Btw you can substitute 50g whole wheat flour with 70g oat flour.

50gwhole wheat flour
20gprotein powder
2 tablespoonscacao powder
¼ teaspoonbaking powder
⅛ teaspoonbaking soda
½ teaspoonxanthan gum
salt
100gskyr
or nonfat quark
30galmond milk
or any milk or water
30gegg whites
2 dropsvanilla extract
artificial sweetener
to taste

Instructions
Step 1
In a small bowl, whisk together the flour, cacoa powder, baking powder, baking soda, salt and xanthan gum until well combined. (have to mix all the dry stuff first otherwise the xanthan gum will clump)
Step 2
Add the quark, egg whites, vanilla extract, milk and artificial sweetener and stir until smooth and everything is mixed thoroughly.
Step 3
Spray a shallow microwave-safe bowl with cooking spray and pour the batter into it. Smooth the top with a spatula or spoon.
Step 4
Microwave on high for about 3 minutes or until a toothpick inserted in the center comes out clean. Be careful not to overcook as it may dry out the cake.
Step 5
Let the cake cool slightly in the bowl before inverting onto a plate or cutting into slices.
Step 6
To serve, top with sweetened quark and fresh fruit as desired. Enjoy!
