Instructions

Prepare the Potatoes

Fill a large pot with cold water. Salt the water, poke the potatoes with a fork just enough to pierce the skin, and place them in the pot. Bring the water to a boil and cook the potatoes until tender throughout, this takes roughly 30-40 minutes.
Step 3
Remove the potatoes from the water. Place each potato piece on a large cutting board and peel it before moving on to the next potato. Also, peel each potato as soon as possible after removing it from the water (without burning yourself). Be aware that you want to work quickly so you can mash the potatoes when they are hot. To do this you can either push the potatoes through a ricer or deconstruct them one at a time on the cutting board using a fork.

Let the potatoes cool and spread out across the cutting board - ten or fifteen minutes. Long enough that the egg won't cook when combined with the potatoes.

Make the Gnocchi

Drizzle with the beaten egg and add the flour across the top.
Step 7
Scrape underneath and fold, scrape and fold until the mixture is a light crumble. Very gently, with a feathery touch knead the dough. This is also the point you can add more flour (a sprinkle at a time) if the dough is too tacky.

Cut it into 8 pieces. Now gently roll each piece of dough into a snake-shaped log, almost the thickness of your thumb. Use a knife to cut even pieces. Dust with a bit more flour.
Step 9
Cook the gnocchi in batches by placing them in boiling water. They will let you know when they are cooked because they will pop back up to the top. Remove them out of the water a few at a time.

Make the Sauce

Start with setting your pan over medium-high heat with olive oil.
Step 12
Add the chopped garlic and tomatoes. Let them cook for 5 minutes.
Step 13
Mix the tomato paste with ½ cup of water and add them to the pan. Follow with the spices: paprika, nutritional yeast, and, ¼ tsp salt. Let the mix cook with the sauce for 3 minutes.
Step 14
For the meat, we are using vegan ground meat. Place it into the pan and combine with the sauce. Let it cook for 10 minutes.
Step 15
Add the cooked gnocchi to the sauce. After 8 minutes, serve in a bowl and topped with Parmesan cheese and thyme.
