Ingredients

6 poundPrime Rib

garlic

rosemary

oregano

thyme

pepper

kosher salt
Blackened Redfish Magic

5 poundwhite potatoes
Instructions
Step 1
Purchase Prime Rib with bone at Costco, QFC, or Safeway (Fresh). Do not buy and then freeze!
Step 2
Rub prime rib with crushed garlic, fresh herb mix of rosemary, oregano, thyme, and pepper. Chop them up and rub really well over the entire rib pressing your hands into it to press the spices into the meat. Wrap the entire prime rib tightly with Saran Wrap and set in refrigerator overnight.
Step 3
Take the rib out an hour before final preparation to allow the rib to reach room temperature. Pour lots of kosher salt all over the beef, especially on the fat portion. The salt on the fat will break down the fat.
Step 4
Then sprinkle with Paul Prudhomme’s seasoning – Blackened Red Fish Magic all over the meat right before putting it in the oven.
Step 5
Broil at 425 degrees (up to 500 degrees) for 5-10 minutes to sear the meat and lock in the juices. Drop the temperature to 325 degrees and continue cooking.
Step 6
Surround the meat with peeled potatoes cut in half when the meat hits ~100 degrees which should be 30-45 minutes before the meat is taken out. Remove the meat when a meat thermometer inserted in middle of meat reaches 130-140 degrees.
Step 7
Let the meat sit tented for up to 30 minutes. The meat thermometer should go up ~20 degrees to 150 degrees in the middle. If needed, the potatoes can keep cooking while the meat is tented until ready.
Step 8
Adjust the temperature you take the meat out of the oven at for your desired final level of doneness. ENJOY!
