One of my New Years resolutions is to re-prioritize breakfast. It gets hectic in the morning and it's so easy to skip the one meal that'll set your day up for success. Making breakfast ahead of time and having it ready to reheat is just one of the ways you can make sure to get the energy you need first thing in the morning.

Preheat oven to 375F and whisk together eggs, almond milk, garlic powder, paprika, salt, and pepper

Grease a 9x13 baking dish and lay out your tater tots (go fancy or just throw 'em in), then top with the cooked sausage and make sure it's spread out.

Add your cup of shredded vegan cheese and pour the egg mix into the dish.

Cover with foil and bake at 375F for 30 minutes, remove the foil, and finish baking for another 15 minutes or until the eggs are set.

Remove, let cool, and cut into squares. Freeze half for later and use the rest for breakfast this week! I like to top mine with green onions and sriracha mayo when it's time to eat.
