Step 1
Preheat cast iron skillet in oven on 375. Pat tofu dry, dice into small pieces and put in bowl. Add soy sauce, rice vinegar, honey, 2 tablespoons of olive oil, parsley, and 1 tablespoons black pepper, mix softly.

Dice red, green, yellow peppers, garlic, and onions. Add 1 tablespoon of olive oil to preheated skillet, then diced peppers, garlic and onions, onions mix, and then add tofu. Roast in oven for 20 -40 minutes until peppers and onions are seared. Serve with jasmine rice and broccoli garnish with black pepper on top.
