Instructions
Step 1
Get a container with a lid large enough to fit 4 egg yolks spaced apart . Then mix the salt and sugar together in a separate bowl . Now pour 1/3 of the salt on the end of the container and use one of the clean washed eggs to make four indents where the egg yolks will

Separate the egg yolks from the whites ( I normally whip up the egg whites and make a delicious meringue ) place the egg yolks into the grooves then cover in the salt sugar solution until
Fully covered . There should be some remaining sugar / salt left and you will use this to top up the container in between. Now put the lid on and place in the fridge for 4 days

Step 3
After 4 days use the remaining sugar and top up the container then put in the fridge for 3 more days . After 3 days remove the yolks brush off the salt and sugar then wash gently and pat dry. Put on a gently greased wire wrack and put in the oven at 65 c or 150 f for 90 minutes then once it’s completely dry it’s ready to be grated . I love mine on avocado !
