Instructions

Step 1
Preheat oven to 375.
Step 2
Keeping skin on, cut acorn squash in half, take out seeds, and cut a small part off the bottom to keep it upright.
Step 3
Coat the inside of the squash with oil, salt and pepper. Set on a baking sheet cut side up, and bake for 40-50 minutes or until tender.
Step 4
While squash is baking, combine quinoa and vegetable broth in a small pot. Bring to a simmer and cook for 20 minutes.
Step 5
Add the spinach to the quinoa and mix until spinach is wilted.
Step 6
Fill each acorn squash half with the quinoa and spinach and enjoy!
