Instructions

Step 1
1.Add the small fish in lukewarm water, add juice of two lemons and let it soak for at least 10 minutes

2.Drain the water and dry the sardines with a paper towel

3.In a deep wide pan or wok, oil the surface add the small dry fish while churning around till golden and crispy
Step 4
4.Drain the excess oil from the small dried fish
Step 5
5.On the same pan, add onions, garlic, tomato paste, diced tomatoes, bell peppers (capsicum) and the fish masala.
Step 6
6.Simmer till tomatoes cook and break down; you can option to puree or blend your tomatoes for an even smoother sauce using an immersion blender
Step 7
7.Add the fried fish and simmer for 3 minutes on low
Step 8
8.Proceed to add coconut milk/cream
Step 9
9.Add salt and pepper cook till sauce has thickened and reduced further for approximately 3 minutes
Step 10
10.Garnish with coriander, spring onion leaves, chives, or parsley
Step 11
11.Serve with ugali ,rice or toast
