Instructions

Step 1
Cook pasta according to package directions until al denote, reserving 1 cup pasta water
Step 2
Drain pasta
Step 3
Add ricotta, parmesan, lemon zest, lemon juice, salt and pepper to the same pot and stir well.
Step 4
Stir in 1/2 cup pasta water until smooth
Step 5
Add pasta and stir vigorously until pasta is well coated, continue adding pasta water as needed
Step 6
Stir in arugula and serve immediately
