Chicken Gnocchi Soup
Creamy Chicken gnocchi Soup is the perfect soup to make for those chilly days. Not to mention it’s super easy to make, I took the easy way out and used a rotisserie chicken but by all means if you have extra time cook your own chicken.

Ingredients
6 servings
1rotisserie chicken
diced small or shredded
4 tablespoonsunsalted butter
1onion
medium, diced
3carrots
peeled and diced
3celery stalks
diced
4cloves garlic
minced
2 teaspoonschicken bouillon powder
1 teaspoonblack pepper
1 teaspoonpaprika
1 teaspoongarlic powder
¼ cupflour
4 cupschicken stock
or broth
1 tablespoonfresh thyme
1 cupheavy cream
1 cupmilk
1 packagepotato gnocchi
½ cupgrated parmesan cheese
1 poundspinach
Instructions
Step 1
1. Melt butter in a large Dutch oven or pot. Add in onions, carrots, celery and sauté for about 5 minutes. Add in the garlic and seasonings and stir until fragrant for about 1 minute.
Step 2
2. Sprinkle in the flour and stir to combine. Cook for 2 minutes, until the flour begins to turn a golden color.
Step 3
3. Add in the chicken stock and give it a quick stir. Add in the fresh thyme and chicken, give it a quick stir again, cover and let come to a boil.
Step 4
4. Next add in the heavy cream, milk, gnocchi and stir. Boil for about 5-10 minutes stirring frequently, until the gnocchi floats to the top. The soup should start to thicken up.
Step 5
5. Lastly reduce the heat to low and add in the grated Parmesan cheese and spinach. Simmer until spinach is wilted, about 1 minute. Serve with more grated Parmesan cheese on top and enjoy!
