Ingredients

1 stickbutter
softened
¼ cupoil
½ cupsugar
2 Tbsppowdered sugar
1egg
at room temp
1 Tbspcream
½ tspvanilla
2 tsplemon zest
2 ⅓ cupflour
¼ tspsalt
1 tspbaking powder

Instructions
Preheat oven to 350°F
Step 1
Line baking sheet with parchement paper; set aside.
Step 2
Cream butter, oil, sugar, & powdered sugar in lg. mixing bowl.
Step 3
Add egg, vanilla, cream, & lemon zest to sugar butter mixture; mix until combined.
Step 4
Add flour, salt, & baking powder; mix until flour mixture disappears. Using lg. cookie scooper, scoop out 8 equally sized cookie dough balls; place them on parchment-lined baking sheet.
Step 5
Bake(11-12 min.); cool on baking sheet (10 min.). Transfer to wire rack to cool completely before frosting.
Lemon-Cream Cheese Frosting
Step 6
Cream butter, cream cheese, cream, lemon juice, lemon zest, & powdered sugar together until smooth & creamy.
Step 7
Generously spread lemon-cream cheese frosting on chilled sugar cookie; top with fresh fruits. Serve or chill for a little longer.
Notes
Step 8
If buttercream is too thin, place in fridge (10 min.); mix again to get it fluffy. (This should allow butter to set & become thick again.) This often happens if butter was too soft to start with or if kitchen is really hot.
Step 9
Store these frosted sugar cookies in fridge (up to 7 days.)
Step 10
Freeze in an airtight container (up to 2 mo.) To thaw, place in fridge to thaw overnight before enjoying!
