Instructions
Step 1
In a large pan melt the butter with the extra virgin olive oil.

Immediately after, add the diced bacon and brown it for a few minutes.

Then add the grated rind of a lemon, being careful not to grate the white part as well.

Add salt and then add the cooking cream, letting it thicken well over low heat for 5 minutes.

Mix the sauce well with a wooden ladle and when everything is ready, turn off the heat and set aside, covering with a kitchen towel to keep it hot.

Meanwhile, cook the spaghetti al dente in lightly salted boiling water and when ready, drain well, keeping a ladle of pasta cooking water.

Pour the spaghetti into the pan together with the lemon and bacon dressing, putting everything back on the flame over high heat and adding the coppino of pasta cooking water.
Step 8
Very gently mix the spaghetti with lemon cream and bacon with a wooden ladle to ensure that the pasta absorbs the sauce.
Step 9
Finally garnish with chopped fresh parsley, pepper and enrich your spaghetti with lemon cream and bacon with freshly grated Parmesan.
