Ingredients
8 servings

2 lbslean ground beef

1onion
small, finely diced

½ cupbell pepper
finely diced

4 ozsharp cheddar cheese

1.5 sleevecrackers

3eggs

½ cupmilk

1 tspsalt

¼ tspblack pepper
For the topping
Instructions
Step 1
Preheat over to 350

Step 2
In a small bowl, combine ketchup, brown sugar, and mustard. Place to the side. This will be used later as the topping.
Step 3
In a large bowl, combine eggs, crushed ritz crackers, cheese, milk, onion, bell pepper, salt and pepper. Mix well.
Step 4
Add in the ground beef. Mix well just to combine. Do not over mix.
Step 5
Form into a loaf and place inside a baking pan or baking sheet lined with foil or parchment paper.
Step 6
Bake at 350 for 30 minutes
Step 7
Remove from the oven and spread the topping over the meatloaf.
Step 8
Bake for an additional 30-40 minutes or j til the center is 160 degrees Fahrenheit.
Step 9
Let it cool for 15 minutes before serving.
