A perfect little salad on the side. I love a salad with fruit as an ingredient and citrus goes so well with spinach - bright and fresh!
Leftover vinaigrette can be stored for up to 5 days in the fridge.

Ingredients
4 servings
4 cupsbaby spinach
washed and spun dry
½ cupchopped walnuts
2 Cupscitrus
peeled and sliced, about 2 oranges, any combination will work well, navel, blood or mandarin oranges, pink grapefruit
1 bulbfennel
shaved in slices
For the Vinaigrette
Instructions
Step 1
Whisk together all vinaigrette ingredients except oil. Add oil in a steady stream while whisking.
Step 2
Toss salad ingredients with a drizzle of dressing and serve.
