Instructions

Step 1
Preheat the oven to 450 F. Coat a rimmed sheet pan with cooking spray or line with foil.
Step 2
In a small bowl, combine the spices. Pat the pork dry with paper towels. Sprinkle the rub over the tenderloin with a fry hand, then rub the seasoning over all sides of the meat, pressing gently so the seasoning adheres well. (Freezing instructions begin here.)
Step 3
In a large skillet, heat the oil over medium-high heat. Place the tenderloin in the pan and cook for about 5 minutes, using tongs to turn it and sear the meat on all sides.
Step 4
Transfer the meat to the sheet pan and roast for about 20 minutes, or until a thermometer inserted in the center registers 145 F and the juices run clear. It will still be slightly pink inside. Let the meat rest 5 to 10 minutes so the juices redistribute. Slice on an angle and serve.

Freezer meal instructions

Step 5
To freeze: place the uncooked, seasoned pork tenderloin in a gallon-size freezer bag. Pressing all the air out, seal tightly and freeze.
Step 6
To prepare from frozen: thaw the tenderloin in the refrigerator for about 24 hours. Start by searing in the skillet.
