1 Tbspginger

1 Tbspgarlic
grated

2 Tbspred curry paste

1can of coconut milk

0.83skinless boneless chicken thighs
cut into large chunks

2 Tbspfish sauce

1 tspbrown sugar

1 tspbrown sugar
palm sugar

basil
or coriander, plus extra to serve

1red chilli
sliced diagonally

1green chilli
deseeded and chopped

jasmine rice
cooked, to serve

4banana shallots
finely chopped
Instructions
Step 1
1) fry the shallots until caramelised and soft
Step 2
2) add the garlic ginger and chilli until fragrant and golden (add water to prevent sticking to the pan)
Step 3
3) add thai red curry paste and fry until fragrant and oil is released
Step 4
4) add the diced chicken thighs and fry until chicken is coated and browned
Step 5
5) add coconut milk and simmer for 20 mins until tender
