Instructions
Step 1
Rub salt pepper and oil into lamb shoulder. Sear generously in pan.
Step 2
While meat is searing, died carrot, onion, celery and mince garlic.
Step 3
Once meat is seared remove and set it side. Add vegetable to pan and fry.
Step 4
In a bowl, chop fresh rosemary and thyme with oregano. Add this to the pan and toss.
Step 5
Once they have browned, add wine to deglaze pan. Then add tomato paste and tomato’s. Once combined add stock. Mix together.
Step 6
Once done add everything to the slow cooker and set aside for 6-8 hours on low.
Step 7
Cook pasta.
Step 8
When pasta is almost ready, use two spoons to tear the meat apart. Add parmesan cheese and mix.
Step 9
Serve meat, pasta and parmesan on the table.
