Instructions
Step 1
Heat oven to 180 degrees C
OvenPreheat
Step 2
Heat 3 tbsp olive oil in a fast iron pot, add lamb shanks, season and cook until golden on the outside.
Cast Iron Pot

Remove shanks and set aside.
Step 4
Add more oil if needed and add onions, cook for 3-5 mins over a low heat until softened. Mix in garlic for 1 min. Add in celery and carrots, season, cook for 5 mins.
CooktopHeat
Step 5
Pour in wine, tomato puree and stock, bring to the boil, reduce heat, add sugar and herbs.
Step 6
Add shanks back in, cover with lid and place in the oven, cook for 2.5 hour with the lid on. Remove lid and cook for 30 mins.
OvenHeat
Step 7
Serve with buttery mashed potatoes.
