Step 1
Preheat oven to 375°f.
Roughly cube chicken.
Grease a 9 inch square baking dish. In a medium saucepan add cubed chicken and enchilada sauce cook on medium heat until chicken is cooked through, and sauce has reduced to approximately 1 1/2 cup, about 20 - 30 minutes.
Drain chicken, save the sauce. Put chicken in food processor. Pulse chicken, add sauce 2 tbsp at a time until you have added 1/2 cup and chicken is is shredded. In a medium bowl combine rice, chopped green chiles, half of cheese, and olives, add chicken and 1/2 cup sauce to rice mixture , stir until combined. Roll enchiladas and place in prepared baking dish until full. If you have extra filling just fill in the gaps around enchiladas. Top with remaining sauce and cheese. Bake uncovered for 20 minutes or until cheese is melted and slightly golden. Enjoy by themselves or add sour cream.
