diced

1yellow bell pepper
diced

2 cupsonion
chopped

1 lbzucchini
chopped

10 ozbaby portobello mushrooms
chopped

3cloves garlic

46 ozSpicy Vegetable juice

15 ozcanned kidney beans
drained & rinsed

1lime juiced

1 Tbspcumin

1 tspcoriander

¼ cupfresh parsley

¼ cfresh cilantro

2jalapenos
med, chopped

3green onions

14.5 ozcan diced tomatoes

Instructions
Step 1
Start by prepping vegetables
Step 2
Heat olive oil in large pot. Over medium heat add turkey, bell peppers. Onion, zucchini, mushrooms, and garlic. Cook until turkey is browned. About 20 minutes
Step 3
Add the rest of the ingredients, putting the scallions aside. Heat to a simmer, stirring occasionally. It will take about 15 minutes
