Step 1
Place about 2 cups of beans over medium heat in a dry cast iron skillet constantly moving the beans around evenly with a wooden spatula or shaking the pan. It's very important that you move the beans around the ENTIRE time they are on the heat. If you let them sit too long, your roast will be uneven. Play some music and move those beans around!
Step 2
You will start to hear a popping or cracking noise. This is when the real roast begins. You can continue to roast your beans to your desired darkness, but keep in mind once you hear the second more violent cracking begin, you only have a couple more minutes until the coffee starts to burn. The different stages of the roasting process are as follows.
