Mustard sauce
Step 1
Toast your sesame seeds until golden and fragrant. Crush with a pestle and mortar. Combine with the rest of the sauce ingredients.
Step 2
Make a cup of white rice. Refrigerate overnight so it dehydrates, or place under a fan for 30 minutes. Without this step, your fried rice will be wet and clumpy.
Garlic butter
Step 3
Prepare the garlic butter. Combine butter and two cloves of minced garlic. Drizzle with some lemon juice and soy sauce and mix well.
For the rice

In the wok, pour some oil and sauté the onion and carrots until golden brown. Then, add the green onion. Take off the heat.
Step 5
In a pan, heat up some oil and sauté your chicken breast cubes. Flavor it with some garlic butter. Mix until chicken is fully coated. Set aside.
Step 6
In the pan, scramble the eggs and set aside.
Step 7
Now it’s time to assemble the fried rice. Pour some oil into the wok over high heat. Add the rice and mix it well so it gets coated with oil. Add the garlic butter, vegetables, chicken, and egg. Stir well until combined.
Step 8
Season your fried rice with soy sauce, salt, and pepper (to taste). Top with sesame seeds.
