Step 1
Pre-heat oven to 200c
Step 2
Take a large baking tray or dish and add the potatoes, chorizo, onion, peppers, seasoning and stock.
Step 3
Place in the oven for 50-60 minutes. Give it good stir a couple of times during cooking.
Step 4
Remove from the oven and stir in the reduced fat creme fraiche and the parsley.
Step 5
Portion up and serve with the rocket.
