Instructions
Step 1
1. Process tomato, chili, lime juice, 1 1/2 tablespoons olive oil and salt in a blender until smooth
Step 2
2. Heat 1 1/2 tablespoons olive oil in a large skillet over medium high heat. Add onion and cook for one minute
Step 3
3. Add yellow squash and cook over high heat until just charred, 7 minutes
Step 4
4. Add tomato mixture and two tablespoons fresh mint. Bring to a simmer. Cook until slightly thickened, three to four minutes
Step 5
5. Sprinkle with remaining 2 tablespoons fresh chopped mint
