Step 1
Put ribs in big pot
Step 2
Add soy sauce, sugars and ginger.

Add just enough water to cover the meat

Bring to boil then lower temperature to simmer for 25mins. Ski. Off all dcum that comes to the surface.
Step 5
Remove the ginger. Turn up heat and boil vigorously until liquid is almost all reduced and you are left with a sticky sweet syrup. Towards end be careful the sauce does not scorch. This may take 20mins or more. You will need to turn the ribs during this time to coat.
Step 6
When ribs are ready put in a bowl and cover with sauce. Serve with white rice.
