Chicken Katsu
2chicken breast skinless boneless
1 cupbuttermilk
½ cupall purpose flour
1egg
whisked
½ cuppanko breadcrumbs
½ Tbspsalt
½ Tbsppepper
neutral oil
Sauce
3eggs
1 ¾ Tbsplemon juice
3 Tbspgranulated sugar
½ Tbspdashi
10 Tbspbutter
melted
¼ cupgreen onions

Instructions
Making the Chicken Katsu
Step 1
Set the chicken breast in the buttermilk and leave in the fridge for 24 hours. Overnight is fine as well
Step 2
Set AP flour, egg, and breadcrumbs into 3 separate bowls
Step 3
Preheat oil to 350 degrees Fahrenheit
Step 4
Pat excess buttermilk off chicken breast and deep fry for 10-12 minutes total
Making the Sauce
Step 5
Separate the egg yolks and egg whites into 2 bowls. Make sure the egg yolks are in a bowl that can be set over a hot pot of simmering water
Step 6
Begin simmering a pot of water
Step 7
Place egg whites into a stand mixer with 1/4 tbsp lemon juice and mix on medium high speed
Step 8
Slowly add granulated sugar while it's mixing and continue to whisk until stiff peaks form
Step 9
For the egg yolks, add the rest of the lemon juice and dashi
Step 10
Whisk thoroughly and place over the pot of simmering water
Step 11
Continuously whisk until doubled in volume. Take off the heat if you feel the mixture is getting too hot

Slowly add melted butter and continuously whisk until all of the butter is used

Optionally, add soy sauce if more saltiness is needed

Take the sauce off of the heat and combine with the merengue using a spatula/spoon

Combine green onions into the sauce and set aside for assembly

Cut the tomatoes into slices

Cut the sweet potato into chunks and cook in boiling water for about 8 minutes or until the inside can be pierced with a fork

Place green leaf lettuce on half of the plate

Place the sweet potato chunks in one corner

Placed a sliced chicken katsu and cover with the sauce

Finish off with 2 tomato slices
