Preheat griddle to 375°
Step 2
Put in blender in that order. Put in the cottage cheese until the blender stops working.

Mix in any remaining cottage cheese, leaving the curds for texture.
Step 4
Lightly oil the grill and ladle batter onto grill. Once bubbles burst on the top of the pancake, flip until browned, about 2 minutes/side.
Step 5
Stack cakes on a warm plate. Heat up maple syrup and butter and any fruit for toppings.
