Tasty vegan, gluten free Pumpkin Pancakes. Surprisingly very fluffy. These are a fast, easy to make, delicious recipe that everyone by will love. Recipe will make about 10 pancakes.

Instructions

Step 1
In a medium mixing bowl, Add all dry ingredients together and mix/whisk until thoroughly combined

Step 2
Add all wet ingredients to the mixed dry ingredients. Whisk or use hand blender until the batter is thoroughly combined. Make sure there is no dry flour and little to no clumps.

Step 3
Let sit for 2-3 minutes to let thicken.
Step 4
Turn electric skillet to 350 degrees. Can use skillet on stove top, but watch for burning.

Use a 1/3 measuring cup to scoop batter. Pour scoop onto skillet, using small silicone scoop to scrape measuring cup. Repeat until skillet is full (5-6 pancakes)
Step 6
After 4-6 minutes, flip pancakes. Repeat for other side. Second side won’t be as smooth as the first side.
Step 7
Have oven set at 170 degrees if you need to keep them warm.
